Zucchini Boats (Cod Zucchini Boats in Picture)
Ingredients:
- 1 Red Bell Pepper, diced
- 1 Yellow Bell Pepper, diced
- 1 Orange Bell Pepper, diced
- 1 Large Yellow Onion, diced
- 6 zucchinis, halved and pitted
- 1.5 lbs of your choice of meat (fresh fish, grilled/ground beef, ground turkey, grilled/ground chicken, mushrooms, or beyond meat or sausage)
- 1 tablespoon of epis or complete seasoning
- 3 tablespoons of ketchup
- 1 1/2 tablespoon of balsamic vinegar
- 1/3 of a cup of water
- 3 tablespoons of avocado oil
- dash of salt and pepper
- 1 lb of love
Instructions:
- Preheat oven to 400 degrees
- Wash, halve, and pit your zucchini; Once your zucchini is pitted, using a fork, poke a few tiny holes throughout zucchini, then take some of the avocado oil and brush your zucchini on both sides and rub in a dash of salt and pepper on each halve and place it in your Pyrex baking pan or a baking pan (You don’t need to spray your pan if using pyrex because the oil on the zucchini will suffice)
- In a frying pan, take a tablespoon of avocado oil and add bell peppers and onions. Once they’ve softened, remove them from the pan in a separate bowl and add in your choice of meat and epis or complete seasoning. Once your choice of meat is cooked, remove it from the pan and place it with your peppers and onions.
- Using the same frying pan on medium heat, add in your ketchup and balsamic vinegar and the third of a cup of water and mix the liquids together. Once it begins to simmer, add in your choice of meat, the peppers, and the onions, cook on low for a few minutes, then fill in your zucchini boats
- Bake your boats at 400 degrees Fahrenheit for 20 -25 minutes
- Once they are cooked, remove them from the oven and enjoy them with the side of your choice.
