Make your own spicy beans which goes well with a beef dish like Daging Rudjak or Rendang. Serve with Atjar Ketimoen and Krupuk Udang. Also good as a vegetarian dish. You can also use regular beans or string beans.
1 big onion
3 cloves garlic (1 tsp garlic powder)
1 package tofu – firm
1 slice laos (galangal)
3 salam leaves (substitute bay leaves)
2 tbs sambal oelek
3 tbs oil
3 tbs small dried shrimps
1 slice trassi
1 lbs green beans
1 firm tofu
1 cup coconut milk – Santen (1 tsp coconut powder 1 cup of water)
2 tsp sugar
1 tsp salt (to taste)
1/4 bell pepper or 1 big mild red chili
Dice the tofu and fry in oil until light brown
Wash the beans and cut in 1.5 inches.
Onion and garlic finely chopped and fry lightly over medium heat.
Add laos and salam
Add dried shrimps and Sambal Oelek.
Then add the beans with tofu and stirr well for 3 min.
Add salt and sugar to taste.
Add 1/4 red bell pepper or 2 mild red chili, finely chopped
To add more juice add two or three cups of coconut milk.
Stir well and simmer for 5 more minutes. Beans are soft inside and
crunchy on the outside.
TIP: Use Kacang Panjang or string beans instead.
