A long day at the office. No take out tonight. You crave something tasty which does not take too long to prepare. You open the pantry and you see one of those life safer packages of ‘instant noodles soup’ . It’s Soto Mie Time! Or I also call it Indo Noodle Soup. It’s a great basis to work with. It’s like frying an egg but then easier. Get your timer out and start the countdown:
Cook the noodles in some water, add the enclosed spices and oil, stir and you are done. This should take 3 minutes. While the noodles were cooking you already started the ‘add-ons’. This is what gives it your signature. Be creative and see what else you got in your kitchen, here is a suggestion:
1 tomato, diced – for some color and chunkier texture
1 egg – make a small omelet and cut it in strips – for some added sponge
lime – 1 slice cut in half – for some zing
1 spring onion – sliced – for some extra boing
optional: 2 tbsp diced, sauteed ham or turkey – for that special kick
drizzle away with some sweet soy sauce and/or garlic chili sauce – for some punch
top it off with some fried shallots – for the crunch
