Keasberry goes Keto with chicken fried cauliflower rice. To make it convenient for you, all ingredients are available at your local Trader Joe’s!
This low-carb alternative to the Indo fried rice is easy to make and provides 2 portions.
Let’s do this…

INGREDIENTS
2 tbsp coconut oil
1 small yellow onion – finely chopped
2 garlic cloves – minced / 1 tsp garlic powder
1 tbsp grated ginger
1 tsp coriander powder
1/2 tsp fish sauce
2 tbs soy sauce
11 oz. chicken filet
2 tbsp leek – finely sliced
1 cup carrots – julienne strips
1/2 red bell pepper – diced
2 cubs grated cauliflower
pepper to taste
salt to taste
2 fried egg – sunny side up
10 Cucumber slices
Italian parsley or cilantro
Chili sauce / Sriracha on the side
METHOD
Heat coconut oil in sauce pan over medium heat
Fry onions until translucent
Add the garlic (fresh or powder)
Add fresh ginger and coriander powder – stir and cook until fragrant
Add the fish sauce and soy sauce
Add chicken and stir fry for 2 minutes
Add leek, carrots and bell pepper and stir fry for another 2 minutes
Add cauliflower rice and stir fry for another 3 to 4 minutes
Keep stirring until rice is a somewhat toasted at the bottom of the pan. This way you get a delicious crispy bite to the dish.
Crack and fry an egg into a skillet with 1 tbsp of coconut oil, until the whites are completely set -edge crispy but the yolk is still runny.
Scoop the rice in a bowl add the fried egg, cilantro leaves, cucumber slices.
Serve with chili sauce or Sriracha.
