Meet the English shepherd’s pie with an Indo Dutch twist. Pastei is the Dutch word for pie and toetoep/tutup is the Indonesian word for closed. Originally “sheperd’s pie” contains lamb meat and “cottage pie” is made with beef. This eurasian fusion shepherd’s pie contains either beef or chicken. There are many versions of this savory pie from Indonesia, depending on region and family. My cookbook has the standard version which you can use to build on. This online recipe is a special edition. Ingredients
1 lb potatoes, peeled
3 tbs real butter
1 tbs heavy cream
3 tbs grated cheese (aged cheddar)
5 eggs
2 cloves garlic, minced
7 oz. ground beef
1 onion, diced
3/4 cup milk
salt to taste
pepper to taste
1/2 tsp nutmeg
coriander, a pinch
2 medium carrots, diced
7 oz. frozen peas
3 oz. frozen corn kernels
1 celery stalk, minced
1 chicken stock cube
2 tsp sambal oelek
1 tbs flour
bread crumbs
Method
Preheat the oven to 350 F<
Boil 2 eggs
Boil the potatoes, drain when cooked. Mash the potatoes until smooth. Add a pinch of salt, a pinch of pepper, 1 tablespoon butter, 1 tablespoon heavy cream and 1 egg yolk. Add in the cheddar cheese. Mix it well.
Mix 1 whole egg into the ground beef. Melt 1 tablespoon butter in a pan, add in garlic and toss until fragrant, add in onions and ground beef and stir until cooked. Add the milk, salt, pepper, nutmeg, coriander, carrots, peas, corn, celery, stock cube, sambal oelek and flour. Cook for 5 minutes. Add in the optional glass noodles.
Transfer the ground beef mixture to a buttered 8”/2 qt ovenproof baking dish. Cut the boiled eggs into wedges and arrange them over the meat/vegetable mix. Spoon the mashed potatoes over the meat, and press into the sides so that the filling is well covered. Even out the top using a fork. Whisk one egg yolk with some melted butter and spread over the pie. Spinkle some bread crumbs over the cheese. Place in preheated over for 45 minutes.
Serve with some sweet and sour pickles and chili sauce.
