Make your own Kecap Manis – sweet soy sauce
The primary ingredients in kecap manis are soy sauce (which provides the salty umami flavor) and palm sugar or brown sugar (which provides the sweetness). Additional flavorings such as garlic, ginger, and sometimes star anise or cloves may also be included to enhance the complexity of the sauce.
Ingredients
1 cup soy sauce
3/4 cup brown sugar or coconut palm sugar
4” Ginger root, peeled
2 cloves of garlic
2 star anise
Method
Bring to a boil while stirring and let it gently simmer for about 10 minutes until it thickens to a syrupy consistency. Be careful not to let it burn.
Kecap manis is supposed to be sweet.
Allow the mixture to cool and strain it. Store it in the refrigerator
