Have a Quicheberry.

Last Sunday we were invited to an Easter potluck party with friends. I decided to make something that’s easy ‘n tasty, knowing that I had to save some room for chocolate eggs.  What came to mind were my special Quiche bites, which I call ‘Quicheberrys.’ A savory tart with a crispy crust and a rich filling of Boursin and cream cheese over vegetables and a contrasting sweet surprise; peach. The guests practically inhaled them. So, have a go at it and be the talk of the party.

This recipe makes 24

INGREDIENTS

5 oz  / 150 gr mushroom, finely chopped

1 medium size onion, finely chopped

1 tblsp olive oil

10 oz / 280 gr brocolli, cut into small florets

15 oz / 425 gr (1 can) sliced peaches in heavy syrup,

1 large red bell pepper, cut in small pieces

5 cloves of garlic, pressed

5 eggs

5 oz / 150gr Boursin

8 oz / 225 gr cream cheese

1/2 tsp. pepper

1/2 tsp. salt

Filo  dough

2 x muffin pans, for 12 each

INSTRUCTIONS

Pre heat oven to 350F.

Chop the mushrooms and the onions and sauté  in one table spoon of olive oil for 5 min. Set aside.

Wash and cut the broccoli into small florets and blanch for 3 minutes. Set aside.

Open the can with peaches, take out the peaches and set aside the syrup. Cut the peaches in small pieces. Cut the red bell pepper in small pieces. Press the cloves of garlic. Combine the mushrooms, onions, broccoli, peaches, and red bell pepper in a bowl and set aside.

Mix 5 eggs in a bowl on medium speed. Add the Boursin, the cream cheese, the garlic, the peach syrup, salt and pepper. Mix for 5 minutes.

Grease the muffin pan with butter or olive oil.

Take the filo dough and cut squares of about 2.5” x 2.5″ / 6 cm x 6cm. Place the filo dough in the compartments of the muffin pan. Use a table spoon to add the mix of mushrooms, onion, broccoli, peaches, bell pepper to the filo dough cups.  Pour 2 table spoons of the egg and cheese mix in the cups. Equally divide what is left.

Put in the oven and bake  for 30 – 45 minutes, until the egg and cheese mix rises and the filo dough is light brown.

Cool on a rack for 10 minutes.

TIP: these Quicheberrys were for vegetarians. If you like you can add bits of bacon or sautéed chicken to the mix.
